This is a nutrient dense meal that can be eaten at lunch or dinner, hot or cold.
Use a cooking tray, cut up vegetables broccoli, sweet potatoes, red onions, zucchini, bell peppers and garlic, mix avocado oil with some Himalayan salt all together with vegetables.
Let the veggies cook for around 40 mins or until done at 150 celsius.
Boil water in pot. Cook vegetable noodles until done.
Combine both noodles and veggies in a big bowl and serve. The flavors of the veggies and garlic saturate the noddles for a very satisfying taste!
