Fully Loaded Sweet Potato


This is a power packed nutrient dense meal.


Ingredients:

Sweet potato

Tomatoes

Garlic

Kale

Chard

Celery

Mushrooms

Avocado

*Sesame oil (optional, if you don't want to use oil, just use water)


Wash, stab and bake sweet potato for 40 mins at 150 celsius. Cut open in half the sweet potato for another 10-20 mins depending on if it is fully cooked.


Sauté garlic first with some sesame oil. Adding then celery, tomatoes, and diced mushrooms. Let it cook on medium/high for a bit until tender. Adding chopped kale and chard sautéing it for only a couple mins.


Combine the veggies on top of the sweet potato, adding a avocado to the top to finish it off.
